The boyfriend wanted salmon, so I produced a salmon dinner.
Our favourite salmon recipe is one that I once found at the BBC Good Food website. However, it seems that the recipe is no longer available due to some copyright issues, so I pulled this one from my memory and probably modified it in the process.
2 slices of salmon without skin, about 200g each
a good handful of parsley leaves, to make about 2 tablespoons chopped parsley
zest of one lemon
1 tablespoon olive oil
2 tablespoons breadcrumbs
3 tablespoons grated Parmesan
a good grinding of salt
an onion, peeled and quartered
boiled potatoes and various vegetables, to serve
Preheat the oven to 200 C.
Drizzle an oven-proof dish with olive oil and sprinkle with salt. Place the salmon slices on the dish.
Mix chopped parsley, lemon zest, olive oil, breadcrumbs, and Parmesan in a bowl. Spread the mixture on the salmon slices. Put onion slices around the salmon.
Put the prepared dish in the oven for about 15 min, depending in the thickness of the slices.
Serve with boiled potatoes and vegetables.
