Vegan lemon and pepper lentils

A colleague of mine invented and suggested this recipe. I decided to make it on the weekend that the boyfriend was away (I know, he is always away!), as he is not the biggest fan of vegan food.

I modified the above recipe slightly: I used half a can of tomato instead of the sliced tomato and I omitted the red peppers. Instead of rice, I served the lentils with some of my beloved onions and one zucchini roasted in the oven.
